Comfort Food - Potato Cheese Soup

This is my Gram's recipe. Gram can cook anything, and it turns out unbelievably delicious. Everything she has ever made has been the best thing I've ever tasted. I am lucky, because Gram taught me how to cook, and judging by my family's reactions, she taught me pretty darn well. I still call Gram a couple times a month for cooking questions - we talk at least once a day just to chat.

Gram's Potato Cheese Soup

Use about 3 lbs of white waxy potatoes (not russets.) Peel and cut into 1/2" cubes. Place in a pot with one finely chopped onion. Add enough water to cover, then add a little more. You want about an inch of water above the potatoes.

Bring to a boil, then cook till the potatoes are tender. Do not drain.
Add about a pound (more or less) of Velveeta cheese, a little at a time, until the texture becomes nice and creamy. Put in a little salt and a lot of black pepper.

Eat four or five bowls and have a big glass of milk with it, or if you really want to do it like Gram, eat it alongside a glass of Squirt poured from a can.
